FWIW I am getting just a little over 70 MPG on my Rebel 500.

At some where just past 140 miles on the odometer the gauge bar starts blinking and I stop for fuel.

Dang, 500's are amazing! Same gas mileage as the 300 and almost twice the power.

If a larger tank ever comes available I'd definitely be interested. There's a gas station at the end of every block, im just too lazy to stop so often though

That's about consistent with our mileage Kenny. I've a Triumph Speed Triple 1050 which is a little thirstier but has a bigger tank. When we are out together we both get around 150 miles from full to twitchy...

Yeah, I don't know what an imperial gallon is.

Honda's website lists the fuel capacity as 2.96 gallons, and estimates 67mpg.

Altitude 900m + above sea level. Winter here so its cool to very cold air. they may be making a difference.

I'm asking them to do a fair bit of work before I buy it (windshield etc) - including putting taller gears on it - That has helped my fuel economy on other bikes that I do a lot of freeway on - I'm also a fairly sedate/careful rider - which helps a lot as well - but we shall see.
And a 5L jerry will fit in the Panniers when I'm going out on a long ramble - so that's another half a tank.

I thought I read on a different forum about someone modding a larger tank from an older Shadow and making it work but he said it was pretty expensive to get done. Just buying an OEM tank can be spendy and then having it done if you don't have the skill set would make it cost prohibitive for most people I'd think. My goal is to have two bikes, a Rebel 500 for commuting and day trips and then something bigger for longer hauls. I still kick myself for selling my '98 BMW R1100r.
